Quick Savory Crab with Rice
We have a lot of crab right now, so I decided to make a quick Crab Stir Fry. As a busy mom, I am always trying to find ways to cut down on time cooking, and here we go. This won't take more than 15-20 minutes! Serves 6.
2 pounds crab, cubed (imitation crab for me, but if you want real crab, go right ahead!)
1 onion, chopped
1 tbsp minced garlic
3 stalks celery, sliced
1 bell pepper, chopped, your choice of color
1 can diced tomatoes (or about 30 grape tomatoes sliced in half)
1.5 cups rice (I just use minute rice to cut on time, but regular will do too)
1 can chicken broth
1/2 tsp cinnamon
2 tbsp parsley
1/2 tsp cayenne pepper
Spray a pan with nonstick spray and, on high heat, saute the onion, garlic, celery and bell pepper till tender, just 2 minutes or so. Add the crab and saute along with the vegetables for about 3-4 minutes. Add the rice, and stir fry for about 2 more minutes, add the parsley and cayenne pepper, and pour in the chicken broth and cup of water. Mix everything together and let boil, cover and turn down heat to medium. Cook till rice is fluffy and done.
Serve! A healthy 6 points a serving! Not bad at all!
