*SIGH* I can't seem to get these photos in this element organized correctly so just bear with me!
Use one box of Pillsbury SUGAR FREE Devils Food or Yellow cake. You will prepare the cake as per directions on the box including baking. Then while still warm, score into chunks and dump into your stand mixer and turn on low with the beater attachement. You are looking for the consistancy shown above. Don't need to beat the hell out of it - just crumble it. 
Add in slowly, 1 can of Pillsbury Choclate or Vanilla SUGAR FREE frosting. Using your paddle attachement. You are looking for a doughy texture - you don't want it turning into a full out ball, you want it moist but not sticky.Let it rest about 10 min, then roll into balls and place on wax paper lined cookie sheet. I used a tablespoon measure to kinda keep similar sizes.Then place balls in the fridge for about 10 min to cool.Melt Wilton Candy Chips (in color of your choice) in the microwave following instructions on package. You only need a little amount to start with. This will become the glue for your sticks.Wrap a Styrofoam block in foil - you will stick your pops in this block to dry.Remove balls from fridge, and dip your sticks (found at Walmart in wedding section) into the candy melt first, then into the balls. Then place back into the fridge for another 20 min or so (this ensures hardening of the melt so that the ball will stay on the stick.).While they are cooling again - melt the rest of the candy melts.Bring balls back out and then swirl in your candy melt coating the ball all the way to the stick (this is important, you want to really glue that ball on). Tap gently to remove excess candy. If this candy spills, don't worry - it's super easy to clean up when it dries. Then if you want toppings - now is the time - before it cools, to add. I used candy stars. Just sprinkle on.Aren't they cute!? They are far from perfect but considering I am NOT a baker (not that into sweet stuff and generally can't have sugar). These roughly - by estimation - have about 6-8g sugar each!:) 
To hold your cake pops upright while drying, wrap a Styrofoam brick in foil and just stab holes in it with the sticks! 
 
BTW - My floors don't normally look like this, it was hard to contain kids and food last night! LOL! And my photos are blurry - sorry, I've never found a point and shoot as good as my real gear that I sold. Im so sad. LOL
Muffulettas (Thanks Stacey)

Ingredients:

Olive Tampenade
Salami Lunch Meat
Ham Lunch Meat
Provolone Cheese
Swiss Cheese
Kaiser Sandwich Rolls

Directions: 

*Spread a layer of olive tampenade onto one side of the bun, then swiss, then ham, then olive then provolone, then salami, then olive, then bun.
*Wrap in foil and place into preheated oven 350 for 15 minutes. 

Pretzel Bites (Thanks Kayla!)

Small pretzels
Rolos Candy
Pecan (or other nut of your choosing)

Directions: 

*Place the pretzels in one layer on the cookie sheet, then place rolos on top of each one. Then put into an oven at 350 and watch closely for melting, then pull out and immediatly top with nuts of your choice. 

Olive and Garlic Appetizers:

All you need are olives of your choice (shown are normal black pitted olives) and pickled garlic (shown is bread and butter), and just layer onto a tooth pick and serve on a cute plate! 

And the shots were the Jolly Rancher infused vodka! Yummy!

Strawberries are on sale right now due tot he holiday coming up - and then you can buy a container of dipping chocolate for $3. This will work on about 3lbs of strawberries - so if you want a frugal way to do Valentines but still look fancy and romantic - this is a fantastic idea! It's a lot more expensive to buy them pre-dipped. Also - they have white chocolate so you can decorate with both - or color the white and make it match other holidays etc.
 
Since I'm a "Former Fatty" my comfort food has changed somewhat. Tonight, I cooked up Acorn Squash, with sugar free fixings. It's simple, healthy, and warm. I hope that if you have never tried this squash before - that you will after seeing this recipe. Even my kidlet loves it!

Ingredients:

1 acorn squash, halved with seeds removed1/4 c melted unsalted butter2-4 tbsp splendaCinnamon1 tbsp Sugar Free Pancake Syrup

Directions:
*place 1/2 of the butter in each half, as well as half of splendaand cinnamon and syrup.*Bake in oven at 350 for about 30 min - checking on it for tenderness. When tender, serve it in it's shell.
**You can add marsh mellows, or nuts if you like. I didn't because I didn't have them!
 
This is a quick, simple, and relatively cheap dessert to make not just for your family - but for parties as well. It's low cal, low-carb and even low sugar. 

  Ingredients:

Fresh Strawberries (or use whatever berries you have available in season)
Light Whipped Cream
Dessert Shells (you can make them, but it's fast to just buy them made)

And then all you gotta do, it put the whip in, then top with a strawberry. The dessert cups only have 9 grams of sugar, and 17 carbs. The whip is 2 grams of sugar and pretty low-cal. It's ready made portion control as well!:) 
 
***Don't let the vinegar freak you out. It gives it a sweet and sour taste that sounds awful but is freaking HEAVEN! Try this once and if you hate it - well...you wont - but if you do - you haven't lost but a small amount of ingredients!:)***

Ingredients:Part Skim Ricotta CheeseSplenda or Torani French Vanilla Sugar Free Syrup 4 Large Strawberries (quartered)2 tbsp Basalmic Vinegar (I use Pompei Pomegranate Flavor)A decorative Margarita Glass (optional)Directions:*mix a large spoonful of ricotta with a 1/2 tsp of syrup. And place in the margarita glass (the glass is optional, but I love using it for small portions and I got it for $.05 at a garage sale!)*Place the vinegar in a small sauce pan and reduce till it coats spoon (not thick it will pour but it should coat for a moment).*Place strawberries in vinegar and stir so they are lightly coated, then pour it all over the ricotta.I love this recipe! It's filling, full of protein, antioxidants, vitamin c, etc. You can try other fruits too! Or if you don't have ricotta, try small curd cottage cheese!:)Ill stuff the remaining strawberries tomorrow cause my littledarlin' loves to eat them!
